Sara's Banana-Pecan Muffins

Banana-Pecan Muffins

1 cup mashed very ripe bananas (2-3 bananas)
1/2 cup sugar1/2 cup plain nonfat yogurt
1/4 cup margarine, melted1 teaspoon vanilla extract
1 egg
1 egg white
2 cups flour1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup chopped pecans, toasted

Combine first seven ingredients in a large mixing bowl until well blended. Combine flour and next three ingredients; stir in pecans. Add flour mixture to banana mixture, stirring just until dry ingredients are moist. Spoon batter into muffin pan lined with muffin liners. Bake at 350 for 15-20 minutes or until a wooden pick inserted in center comes out clean. Makes about 16 muffins.

Note: this recipe can also be made as a loaf. Cook 1 hour, 5 minutes in a loaf pan sprayed with baking spray containing flour.
